I saw this recipe in an email from the Food Network today, and thought it sounded simple and delicious. I hope you enjoy it! 🙂
* 3/4 cup frozen corn, thawed
* 1/2 cup quartered grape tomatoes
* 1 medium avocado, diced
* 1 tablespoon chopped fresh cilantro
* 2 teaspoons lime juice
* 1/4 teaspoon kosher salt
Toss avocados, tomatoes, corn, cilantro, lime juice and salt in a medium bowl.
